The Caesar salad bears its name in honor of the name of its creator - the culinary expert Caesar Cardini. One day, he decided to cook his signature dish, but suddenly found that he did not have the right ingredients for this. But there was still something in stock, therefore, after thinking a little, he created a separate dish, which then came to us as a classic Caesar salad, which is now loved by both adults and children.

We buy ingredients for the salad

There are a huge number of varieties of "Caesar". However, whether we prepare the classic Caesar salad with shrimp, chicken, feta cheese, avocado, turkey, ham, fish or any other main ingredient, the rest of the ingredients remain the same. Therefore, if you do not want, like Cardini, to suddenly find that it is impossible to prepare the desired dish, you should go to the store in advance and buy the necessary components there.

You will need a regular white loaf, cherry tomatoes, Parmesan cheese for sprinkling, leaves and fresh chicken fillet for the classic Caesar salad with chicken or any other ingredient you crave in this dish. But to prepare the sauce - an integral part of the dish, you will have to buy chicken eggs, mustard, garlic, lemon and olive oil. Well, salt and pepper for sure every housewife already has, but if they run out, then, of course, they will also have to be purchased.

General salad recipe

After purchasing all the ingredients and choosing the kind of classic Caesar salad that you want to taste, you can safely start preparing the dish. It doesn't matter what component will be the main one in "Caesar", the general principle of preparation of this dish is always the same and is clear to the culinary specialist. So, to create a dish and sauce, you will need:

  • one head of lettuce;
  • 1 baguette or white loaf per 200 grams;
  • 100 grams of cherry tomatoes, but other tomatoes will work as well;
  • 50 grams of Parmesan cheese, but any other hard cheese will work;
  • 3 cloves of garlic;
  • 150 ml olive oil;
  • 3 tablespoons of lemon juice;
  • 1 tablespoon mustard
  • 2 chicken eggs;
  • pepper and salt to your liking.

The last component of the classic Caesar salad, be it shrimps, mushrooms, or something else, we always take in the amount of 200 grams. Then we simply combine torn green salad leaves, crackers made from a loaf and a completely ready-to-eat main component of the dish. After that, pour the prepared dish made from olive oil, lemon juice, mustard and egg yolks with sauce, sprinkle with grated cheese and serve the dish to the table.

Cooking salad croutons

It doesn't matter if you are preparing a classic simple Caesar salad with shrimp, chicken, bacon, mushrooms or any other main ingredient, the first thing in the cooking process is to make crispy and aromatic croutons from the purchased loaf. To do this, you need to cut off all the crusts from the bread, and then cut it into small cubes. Next, we prepare the sauce, which will be poured over the croutons, for which we crush 1 clove of garlic with a knife and fill it with three tablespoons of olive oil. After that, the composition should be heated in a microwave oven for 20 seconds, and it will be possible to fill them with crackers, which are then placed in the oven and dried for half an hour at a temperature of 150 ° C.

Cooking chicken fillet for salad

Most often, novice cooks cook at home a classic Caesar salad recipe, the main component of which will be chicken. Before cooking, the chicken fillet should be thoroughly rinsed in running water and then dried with a paper towel. After that, the meat is cut lengthwise into 2-3 pieces, salted on both sides and laid out in a pan. You will need to fry the chicken fillet until a golden crust forms, which will take about 7-8 minutes. At the final stage of preparation, the chicken will have to be cooled to room temperature, and then cut either into cubes or small slices - at your discretion.

Seafood lovers of all varieties of the dish prefer the classic simple Caesar salad with shrimp. But just before you mix it with the rest of the ingredients, you need to prepare the seafood. To do this, shrimp bought in a supermarket or on the market in an amount of 200-300 grams should initially be boiled in salted water for three minutes. After that, we clean them from the shell, put them in a bowl with olive oil and garlic and marinate for half an hour. At the final stage, before adding the ingredient to the salad, it remains only to fry the shrimps over low heat for a minute, so that they become a pleasant golden color.

Prepare romaine lettuce to be added to the dish

The most important ingredients in the classic simple Caesar salad recipe are the lettuce leaves. Most often, romaine lettuce leaves are used for this dish, but iceberg lettuce is also suitable. At the very beginning of the preparation, you will need to thoroughly rinse the bunch of lettuce under running water, and then leave to dry for 10 minutes. After that, lettuce leaves need to be torn into large pieces and sent to ice water, so that they will not wilt and will crunch pleasantly while eating.

Cooking the dressing sauce

It doesn't matter if we prepare the classic Caesar salad with chicken or it comes with bacon, seafood or anything else - its most important ingredient is the sauce that is poured over the dish before serving. The first step is to bring the eggs to room temperature, for which you need to either remove them from the refrigerator a couple of hours before cooking, or put them in warm water for 10 minutes. Then boil the eggs for a minute, cool and separate their yolks from the whites.

After that, we proceed to preparing the sauce itself for the classic Caesar salad. To do this, grind the garlic strongly with a knife or crush it with a garlic press, and then grind it together with two yolks and mustard until a homogeneous state is obtained. After that, add the juice squeezed from the lemon and a small amount of salt to the dry mass, and at the end gradually pour the remaining olive oil into the container, which will make the dressing liquid. The main thing is to constantly stir the sauce during cooking, and then the result will be simply magical.

How to decorate and serve a dish correctly

Also, a very important aspect of creating a Caesar salad according to the classic recipe is its design and serving. To do everything right, you should lay out all the prepared ingredients in the correct sequence. The first is a layer of crispy torn lettuce leaves, then a layer of a mixture of crackers and chicken or any other component (shrimp, bacon, mushrooms, feta cheese, etc.), which can either be mixed together or laid out in a checkerboard pattern. The third layer is hard cheese, which is rubbed on a coarse grater directly over the dish. And, finally, the dish is decorated with cherry tomatoes cut in half or ordinary tomato slices.

Caesar salad with chicken and shrimps

As you can see, it is not difficult even for novice cooks to cook Caesar salad at home according to the classic recipe. All sorts of recipe variations are just as easy to prepare, the most common of which is to create this dish with chicken and shrimp together. To prepare it, you will need the same ingredients as for a regular Caesar salad, only the chicken fillet should be 150 grams, and the peeled shrimp should be 100 grams. The very same cooking process is also identical to the classic recipe. The only thing, in this case, when serving, the second layer will be chicken with shrimps, then the dish is poured with sauce, and cheese is rubbed on it and crackers are placed. In this case, you do not need to add tomatoes.

Caesar salad with any additives

Once you have learned how to make a classic simple recipe for Caesar Shrimp Salad, you can make this dish with any other additions. The main thing is to prepare them so that they are completely usable without further processing. That is, mushrooms, fish should be boiled and fried, the feta should be cut into large cubes, the bacon should be cut ... There are simply no boundaries of imagination. It is important that the amount of these additives is approximately equal to the amount of crackers and green salad, then the dish will turn out to be balanced and will delight even the most picky gourmets.

But this is not at all a reason to give up your favorite dish, which can be prepared without any problems without this component. It's just that in this case, you will have to transform the classic Caesar salad recipe quite a bit. We need:

  • 400 grams of romaine lettuce or iceberg lettuce leaves;
  • 100 grams of loaf;
  • 2 cloves of garlic;
  • 50 grams of olive oil;
  • 1 chicken egg;
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon grated hard cheese
  • pepper and salt to taste.

The first step is to tear the lettuce leaves and make croutons from the toasted bread. Then you can start decorating the dish, for which you will first need to grate the bowl with garlic, and then put the lettuce leaves on it, which must first be sprinkled with olive oil. Next, lettuce leaves are moistened with Caesar salad dressing, which is prepared in a standard way, and a layer of croutons and grated cheese is placed on it. The salad is decorated with a chopped boiled egg.

Quick Caesar salad

If it so happens that you do not have time to prepare the classic simple Caesar salad with chicken or seafood, then this recipe can be slightly transformed and whipped up your favorite dish. It will be possible to save time due to the fact that it will be possible not to fry croutons in the oven, but to immediately buy ready-made in the supermarket - even ordinary ones, even with different tastes (from garlic to hunting sausages), so that everyone can choose this ingredient at their own discretion. And the sauce in the salad can be replaced with regular mayonnaise. For such a dish, you just need to cook the chicken by frying it in a pan, and then collect all the ingredients together and pour over the salad with purchased mayonnaise, which, of course, is better to take with a lower percentage of fat.

Rolls with Caesar salad

If you are already tired of the classic Caesar salad recipe with shrimp, chicken or any other additives, you can try to cook this dish in an unusual variation in the form of rolls. Such an appetizer can be taken with you for a snack or put on the table, which it will decorate due to its uniqueness. So, for the preparation of rolls you will need:

  • a thin sheet of pita bread;
  • 150 grams of lettuce leaves;
  • 200 grams of chicken fillet, shrimp or any other additives;
  • 100 grams of juicy tomatoes;
  • 50 grams of hard cheese;
  • 4 tablespoons olive oil
  • 150 grams of homemade mayonnaise or natural yogurt unflavored;
  • 20 grams of capers;
  • 20 grams of mustard;
  • 60 grams of anchovies;
  • 20 grams of olives.

To prepare the rolls, the first step is to boil or grill the chicken fillet, and then, after cooling it, cut it into small pieces. To prepare rolls according to the classic recipe for Caesar salad with shrimps, you can do even easier - just boil them and fry them. After that, you will need to cut the tomatoes into circles, grate 30 grams of cheese and tear the lettuce leaves into small pieces. In the next step, all the remaining ingredients are collected in a blender bowl and whipped there until smooth.

In conclusion, it remains only to lay out the prepared ingredients on a layer of pita bread, having previously greased it with half of the resulting sauce. The components are laid out with a five-centimeter deviation from the edge of the pita bread in this order - lettuce, tomatoes, grated cheese and chicken, shrimp or any other main component on top. Next, all the ingredients laid out are greased with the remaining sauce and wrapped in a roll, which is placed in cling film and sent to the refrigerator for a couple of hours. At the end, the roll is cut into small rolls, and they can already be served to the table or taken with you to work or study.

Classic Caesar

It is unlikely that the author of the classic Caesar salad, the American chef of Italian origin Caesar Cardini, could have imagined that his work would be so famous all over the world. Legend has it that the chef ran out of almost all of the products just when a large and noisy company of Hollywood filmmakers raided into his restaurant. The enterprising Italian collected everything that remained, and ... went down in the history of world culinary. He didn't have much left: lettuce, garlic croutons, olive oil, eggs, Parmesan and Worcestershire sauce. They are the main components of a real Caesar, and not a chicken, as many think. But if Cardini had chicken breasts, I'm sure he would have sent them to this salad.

Nowadays, there are a lot of options for Caesar salad and sauces for it. By the way, Caesar Cardini would hardly be offended. After all, the first who began to modify this salad was his brother.

Ingredients for Caesar salad with chicken and croutons:

For 2 normal servings

1/2 loaf (200g), preferably a baguette
300 g chicken fillet (fillet of one breast),
1 large bunch of lettuce
50 g parmesan
1 clove of garlic
1 tomato (optional)
100 ml olive oil
salt,
pepper mix

For Caesar sauce:

Classic American sauce:
5 black peppercorns,
1/2 clove of garlic
a pinch of salt,
1 tablespoon of Worcester sauce
3 egg yolks,
75 ml olive oil
1/4 lemon juice,
some Dijon mustard

Instead of chicken fillet for making Caesar salad, you can take smoked salmon, salmon or shrimp, which will also be very tasty.

The recipe for Caesar salad with chicken and croutons:

Rub the chicken breasts with salt and a mixture of different peppers. Cover with plastic wrap and refrigerate for several hours to marinate.

Heat 100 ml of olive oil in a frying pan. Throw in a crushed or chopped clove (or two) of garlic and fry until barely golden brown. Take out the garlic and throw it away. If you overexpose garlic in oil, an unpleasant odor will appear.

Cut the dried loaf or wheat baguette into small cubes. If you are not lazy, then you can pre-cut the crust.

Fry the pieces of loaf in butter with garlic until golden brown. Garlic croutons and special dressing are what makes this appetizer exactly Caesar salad.

Fry the chicken fillet in a hot skillet until tender, about 3-5 minutes on each side. You can fry both breast halves and cut the chicken into thin strips. Do not cover the chicken with a lid, otherwise it will give juice and the breasts will not be as tender as we need.

Caesar salad sauce:

Of all, I liked the classic one more. The classic Caesar sauce contains Worcestershire sauce, but can be substituted with anchovy with sugar and lemon. Grind the fillet of one anchovy, a creeper of garlic, a few peas of black pepper, half a teaspoon of sugar and a pinch of salt in a mortar.

Add three egg yolks there and mix. Dripping olive oil. Beat the sauce. We continue to add oil drop by drop and beat it with a fork into the emulsion. Gently drip oil, excess movement - and the sauce will exfoliate. Three yolks will need about 75 ml of oil. Add the juice of half a lemon and Dijon mustard to taste. Let's mix.

It seems to be mayonnaise, but not mayonnaise either. It tastes more like aioli, only with anchovy and less garlic.
If you use Worcestershire sauce, you need 1 tablespoon, do not add sugar, and reduce the amount of lemon juice to 1/4 of a lemon, Worcestershire sauce is basically fish with sugar and acid (vinegar).

Putting Caesar together:

Rub the salad dish with garlic. Tear lettuce leaves with our hands not finely, put them on a dish. Sprinkle with sauce, sprinkle with Parmesan.

Put the chicken fillet cut into cubes or cubes on the salad, sprinkle with the sauce again.

We spread the croutons. Sprinkle with sauce, sprinkle with grated Parmesan, and you can immediately serve the salad to the table.
