The taste of almond milk is delicate and soft, without bright expressive notes, but it is richly nutty. You can make it more or less concentrated to your liking by adding less or more water. The rest of the cooking process will take literally 5 minutes - the almond milk recipe is simple. Just soak raw nuts overnight, and in the morning you will get an unusual and delicious drink.

    Transfer the peeled almonds to a blender and add 1 cup of water.

    Grind the nuts with water until the nuts are ground as finely as possible. This way they will saturate the water as much as possible. You will see that the water has turned white - it looks like regular cow's milk.

    Then add the rest of the water and blend again for 30-40 seconds.
    Then strain the milk through thick linen cloth or gauze folded in 4-6 layers.

    Squeeze the pulp thoroughly. Do not rush to throw away the cake, it is very tasty and is great as an additive for making sweets, pates and salads.

    You can enjoy this milk right away, or you can add a drop of honey or any other additives, such as vanilla and cinnamon.
    Almond milk should be stored in the refrigerator for no more than 3 days.

Don’t rush to throw away almond cake, it’s very tasty. Use as an additive in homemade candies, chicken pates and any salads. To do this, dry and store in a cool place.

To make your own homemade almond milk, you only need two ingredients: almonds and water.

  1. Almonds must be raw, that is, not heat-treated.
  2. It is necessary to revive the nuts, that is, to germinate them. To do this, soak them overnight in water at room temperature.
  3. When the almonds swell, peel them so that you can use the pulp from them in the future. If the skin does not separate easily, pour boiling water over the nuts.
  4. Beat the kernels in a blender with water: for 1 cup of nuts - 3 cups of water. You can vary this ratio to produce richer milk or cream. We recommend adding only part of the water at first so that the nuts are ground better, gradually increasing the amount to the required amount.
  5. Squeeze the milk through cheesecloth or a synthetic bag. The pulp can be widely used in various recipes.

It is best to use almond milk immediately or store it in the refrigerator for no longer than a few days.

Mix milk with sugar powder. Bring to a boil. Add soaked gelatin. Stir, cool, pour into molds, and then place on the refrigerator shelf.

Vegan pancakes

Necessary:

  • 0.5 cups whole grain flour;
  • 1 glass of almond milk;
  • 2 tablespoons flaxseed flour;
  • 1 tablespoon cane sugar;
  • 0.5 teaspoon of soda;
  • a pinch of salt.

Mix almond milk with flaxseed meal. Add salt, soda and sugar. Beat with a mixer for a few minutes. Leave until the flaxseed meal swells. Then gradually add whole wheat flour. You can add water if necessary (if the dough turns out too thick). Heat a frying pan with a small amount of oil and start baking pancakes.

Soak a handful of sweet almonds in cold water. After five hours, drain the water, add 1 tbsp. coconut flakes and 3 tbsp. powdered sugar.

Beat with a mixer or inside a blender with 300 ml of water.

Mix 100 ml of ten percent cream with one tablespoon of gelatin. After 35-40 minutes, that is, when the gelatin swells, heat it, but avoid boiling. Filter the contents of the blender.

The cake from the contents is very tasty. You can bake cookies with it, the recipe for which is given below, or just eat it.

Mix the resulting milk with gelatin, distribute into molds and refrigerate. After several hours, Almond Pleasure jelly with almond flavor will be ready.

Method No. 1

Take 50 grams of almond kernels and grind them in a mortar. Pour 100 ml of water and put on boiling water water bath. Cook for 5 minutes and then strain. For the above diseases, this volume should be drunk 3 times a day half an hour before meals.

Soak a certain amount of sweet almonds in water for several hours (you can soak them overnight and start cooking in the morning). Once the almonds are soft, grind them together with water in a blender. For one glass of almonds you need to take 3 glasses of water. Filter the resulting mixture using gauze. The liquid that remains after filtration is almond milk.

You can simply drink this milk or add it to dishes. In this case, milk can be flavored with cocoa or vanillin, sweetened with sugar, honey or spices to taste.

The remaining cake can be diluted with water and ground to make more milk. Or make delicious marzipan sweets.

Almond milk should be stored in the refrigerator for no more than three days.

In general, almond milk is prepared quickly, but you need to take into account the time for infusion and swelling of the nuts. To avoid long waits and counting hours, we recommend soaking the nuts in water the night before and refrigerating them overnight. In the morning, with the help of a blender, we will have time to complete the preparation, and by breakfast we can already enjoy a silky, tasty drink.

Ingredients:

  • drinking water - 700 ml.

Almond milk recipe at home

  1. First you need to prepare the almonds, namely peel them from the brown skin. To do this, pour the nuts into a convenient heat-resistant container. Pour boiling water - the liquid should completely cover the almonds. Leave for 10 minutes.
  2. Then remove the steamed skin. After being in boiling water, the skin will swell, soften, and the nuts will be easy to peel. If the almonds are difficult to peel, pour boiling water over again, after draining the cooled liquid.
  3. Place the peeled kernels in a clean container and fill with cold drinking water(700 ml). Leave for 2-4 hours, or better yet, cover the container with cling film/lid and put it in the refrigerator overnight.
  4. Pour the water along with the swollen almonds into a deep glass for making cocktails or the bowl of a stationary blender. Mix thoroughly at high speed for 2-5 minutes, like a cocktail or smoothie. As a result, the nuts should be crushed into minimal crumbs (almost into flour), and the water should become saturated white like regular cow's milk. If desired, you can add honey or sugar and beat a little more, you can also flavor the liquid with cinnamon, nutmeg or other spices. But even in its pure form without additives, almond milk turns out very tasty and balanced.
  5. Strain the finished drink through 4 layers of gauze to get rid of small particles of nuts and get perfectly homogeneous, tender and silky milk. We do not throw away the almond crumbs remaining on the fabric - they can be dried and added to biscuits, cookies, muffins, pancakes, etc. in the future. After straining and all manipulations, approximately 500 g of pure finished drink is obtained. Homemade almond milk can be stored in the refrigerator in a covered container for 2-3 days.
  6. We use our healthy and tasty drink in any way you like - sip it through a straw with cookies and other sweets, add it to tea, coffee, cocoa, etc., or leave it for preparing other dishes.

It would seem that just recently I was a loyal fan of dairy products and did not even imagine that someday I would have to look for a replacement for them. But everything is changing, and it’s been almost six months since dairy products have been excluded from my diet. And to be honest, I don’t even know if I’ll turn them back on when I get better. After everything I now know about them... knowing too much is harmful, that's a fact :).

What I definitely want to try is almond milk, and I can't wait to be able to eat nuts again. In the meantime, my friend and former CookWizMe colleague from sunny Sicily, Andrea Soranidis, shared with me her recipe for homemade almond milk. Fortunately, you won't have to milk anyone - you just need a blender, almonds and several layers of gauze :).

By the way, yes, this is the same Andrea, whose food photos in CookWizMe we all drooled over with the whole team :). Now Andrea has her own food blog, The Petite Cook, and as you probably already guessed, I still meditate on her recipes, especially those that I can’t do yet :).

Returning to almond milk, it’s definitely worth trying, and here’s why:

  • Unlike cow's milk, almond milk does not contain lactose and casein, which means it is suitable for those who adhere to a lactose-free and casein-free diet.
  • It is also suitable for vegans and those who fast.
  • An average glass of almond milk contains only 60 calories - that's 2 times less than 2% cow's milk.
  • Almond milk has low glycemic index, which means it will have little to no effect on your blood sugar levels, and the carbohydrates it contains will be used as energy rather than being deposited on your lovely butt or waist.
  • The content of vitamins in it is also pleasing: calcium and vitamin D for strong bones, vitamin E for glowing skin, B vitamins for muscle growth and recovery.
  • And as an additional bonus, it doesn’t sour as quickly as cow’s or goat’s milk, which means you can take it with you, for example, on a hike. Although, no, water is better when hiking.
  • Well, in the end, they say it’s very tasty! And I readily believe this, because I simply adore almonds. And judging by the recipe, it’s not at all difficult to make. Plus, homemade almond milk will definitely not contain preservatives or any other additives or sweeteners—unless you add them yourself, of course.

Well, it seems that now I sound exactly like my grandmother - when we came to visit her, her obligatory task was to feed us abundantly (it was better for her not to appear on an empty stomach) and we also certainly had to listen to a lecture on the properties and nutritional value of everything we eat :). I think if my grandmother had lived to this day, she could have helped me a lot with the blog :).

Regarding almond flour- this is just a salvation for those who are on a gluten-free or paleo diet and miss delicious treats. Almond flour can be used to make anything from macarons to chocolate cake! In anticipation of a happy moment, I have already collected a whole collection of recipes that I plan to try when I get better. And, of course, I desperately envy those who don’t have to wait for anything!

Andrea's almond milk recipe

You will need:

  • 1.5 cups whole, unroasted almonds
  • 4 glasses of water
  • 1 tsp vanilla extract (optional)
  • 1.5 tsp. honey (optional)
  • ¼ tsp. salt

What to do:

  1. Soak the almonds for at least 12 hours in clean, salted water.
  2. Drain the water, remove the skin from the almonds (this is optional, although it will be easy to do after soaking) and rinse thoroughly clean water.
  3. Grind almonds in a blender with 1.5 cups of pure drinking water until creamy. If desired, add honey and beat thoroughly with a blender again.
  4. Strain the almond milk through several layers of clean cheesecloth or a kitchen towel.
    (note from Tastyglutenfree: In such cases, I first rinse the towel in boiling water so that there are no traces/odors left on it washing powder or other foreign odors.)
  5. When almost all the liquid has drained, twist the towel and squeeze out what remains.
    The liquid you strain is your almond milk - you can drink it plain, make a smoothie, or use it for lactose-free baking as an alternative. cow's milk. You can also add vanilla extract to it or omit the vanilla pod (note from TGF: not to be confused with vanillin, it will taste bitter and ruin everything!).
  6. And spread what is left in gauze (or in a towel) on a baking sheet and dry in the oven at 70C for about three hours.
    Voila: you have real almond flour - gluten-free, without any additives, with which you can bake many different delicious things! Or even make a body scrub :).
  7. You can store almond milk in the refrigerator for 3 to 5 days. It can also be frozen into ice cubes and used as needed.
